It's that time of the year again! Strawberries and rhubarb are ripe for the picking! I personally love Strawberry Rhubarb Crunch, but of course I had to figure out how to make it healthier. There are tons of recipes out there that are full of sugar and carbs but I personally wanted a recipe that offered some protein and healthy fats and still tasted like a delicious treat. <3 I replaced regular flour, that has very little nutritional value, with almond flour and chopped pecans. I also added vanilla protein shake for added sweetness, flavoring and protein. In stead of using regular highly processed white sugar that is loaded with empty calories, I replaced it with honey, Truvia and a little palm sugar. If you've read my past blogs, you know that honey, palm sugar and Truvia are lower on the Glycemic Index (GI). Agave is another great option as a sweetener. I hope you enjoy this recipe!
